Master Teriyaki Sauce

Season 5, Episode 2
THE SAVORY MOMENT

Sign your name to your next meal with a signature teriykai sauce. Use the master recipe below, switching up your choice of sugars, acid, salt, and spices.

MASTER TERIYAKI SAUCE RECIPE

1/2 cup sugar choice
1/4 cup acid choice #1
1/4 cup acid choice #2
1/4 cup fish sauce
1/4 cup soy sauce
Your choice of spices: bay leaf, star anise, cinnamon stick, Aleppo pepper, or anything else that strikes your fancy.
Optional: 2 teaspoons cornstarch

Place all ingredients (except the cornstarch, if using) in a pot and warm over low heat until the sugar has dissolved. Allow the spices to steep for 30 minutes. Strain. For a thicker sauce, mix cornstarch with a 1/4 cup of the cooled sauce, whisk into the pot, and simmer gently for 3 minutes.

Potluck Pleaser Coconut Rice

Season 5, Episode 3

Serves 24. Here is the only potluck dish you will ever need!

4 1/2 cups jasmine rice
1 tablespoon vegetable oil
5 teaspoons brown sugar
2 1/4 teaspoons salt
2 15-ounce cans coconut milk
4 1/2 cups hot water

Over medium low heat, combine the rice, oil, sugar, and salt in a pot. Stir to combine and saute for 3 minutes.

Meanwhile, whisk the coconut milk and hot water together in a bowl. Add to the pot, bring to a gentle simmer, and turn the heat to low.

Cook for 15 minutes, or until the rice has absorbed all the liquid.

Marinate wild game for at least 12 hours or up to 24 hours.

Dark Days Kale and Salmon Salad

Season 5, Episode 7
THE SAVORY MOMENT

Serves 2. This salad is full of mood boosters like vitamin C, magnesium, and probiotics, perfect for the dark days of winter.

6 cups chopped kale
1 teaspoon olive oil
1 teaspoon lemon juice
Dash of salt
6-ounce can Alaska salmon
1/2 cup wild blueberries
KIMCHI YUM YUM SAUCE
⅔ cup plain, full-fat Greek yogurt
⅓ cup mayonnaise
1 tablespoon gochujang (Korean chili paste)
1 teaspoon Huy Gong chili garlic sauce or sriracha
½ teaspoon garlic powder
Pinch of sugar
2 tablespoons good kimchi

Place kale in a medium salad bowl. Add the olive oil, lemon juice, and salt. Massage until greens are reduced by 25 percent.

Drain salmon and place in chunks on top of the kale. Sprinkle on the blueberries. To make the dressing, combine all the ingredients in a food processor. Drizzle a little or a lot onto the salad, according to your preference.

Blender Potato Pancakes

Season 5, Episode 8

Serves 2-4. This recipe comes from The New York Times Natural Foods Cookbook by Jean Hewitt. Serve with applesauce and sour cream.

2 medium-sized potatoes, scrubbed or peeled, and quartered
1 egg yolk
Sea salt to taste
2 egg whites, beaten until stiff but not dry
Oil

Put the potatoes, egg yold and salt in an electric blender. Blend until smooth. Pour into a bowl.

Fold in the beaten egg whiltes. Heat oil to a depth of one-eighth inch in a heavy skilled and ladle the mixture into the hot oil to make small cakes. Cook until browned, turn and cook to brown the second side.

Saucy Chimichurri Rockfish

Season 5, Episode 11
THE SAVORY MOMENT

Serves 4. The secret to really good rockfish is in the sauce. Use a snug casserole dish with high sides to trap the moisture of escaping juices.

1 1/2 pounds rockfish, like yelloweye or quillback, portioned
Juice of 1/2 lemon
Salt
CHIMICHURRI SAUCE
1 cup packed cup parsley
1 packed cup cilantro
¼ cup olive oil plus extra for drizzling
4 cloves garlic, minced
1 teaspoon salt
1 teaspoon red pepper flakes
1 tablespoon dried oregano
1/3 cup minced red onion

Preheat the oven to 350 degrees. Place the fish in the casserole dish. Sprinkle with lemon juice and a generous application of salt. Allow to rest while you prepare the chimichurri sauce.

To make the chimichurri, pulse parsley through oregano in a food processor until the herbs are in tiny pieces. Transfer to a container and stir in the red onion. Drizzle with extra olive oil.

Spread tablespoon of sauce onto the top of each rockfish portion. Spoon about half the sauce into the crevices between the portions, reserving the remainder to serve at the table.

Bake the rockfish for 10 to 15 minutes, or until the juices become a little creamy from expelled proteins. Remove from the oven.

Swirl the liquid in the bottom of the dish to combine the rockfish juices and the chimichurri. Serve with creamy polenta or mashed potatoes to catch the flavorful sauce.

Tarragon Butter

Season 5, Episode 12

Makes 1 cup. Tarragon butter mades a lovely addition to roasted vegetables, chicken, fish, or potatoes. Apply after your ingredients are cooked, since the flavor of this delicate herb fades with heat.

2 sticks butter, softened
1/4 cup minced tarragon
1/8 teaspoon salt

Place the tarragon and salt in a food processor. Pulse until the herb is expelling some fragrant juices, scraping down the bowl as necessary. Add the softened butter and process until the tarragon is in tiny pieces and the butter takes on a green hue.

Melt onto cooked vegetables, chicken, fish, or potatoes.

Thai Salmon Salad with Mango and Basil

Season 5, Episode 13
THE SAVORY MOMENT

Makes 3 large, sunny-tasting salads.

SALMON
1 pound wild coho salmon, cut into 3 portions
1 tablespoon fish sauce
2 teaspoons red curry paste (I use @maeploy_kitchen)
½ teaspoon maple syrup (fan of @maplesyrupvermont)
3 tablespoons olive oil
2 cloves garlic, grated
ZESTY BASIL DRESSING
1 packed cup fresh basil (I love @juneaugreens)
1 packed cup cilantro
Juice of 1 lime
½ cup coconut milk
2 tablespoons olive oil
½ teaspoon fish sauce
½ teaspoon maple syrup
SALAD
9 cups mixed greens of your choice
3 cups chopped fresh vegetables of your choice
1 large mango, diced

Massage fish sauce into salmon portions. Mix curry paste with maple syrup, olive oil, and garlic. Spread glaze (use it all) over the salmon. Set aside.

To make the dressing, blend all of the ingredients in a food processor or use an immersion blender in a jar. Divide salad greens and vegetables among 3 plates.

Preheat the oven to a high broil. Place the salmon portions on an oiled baking sheet, then broil for 3 to 5 minutes, or until the glaze is bubbly and the fish is cooked through.

Transfer the salmon portions to the salads. Top with mango and every last drop of that healthy and delicious basil dressing.
