Sample Dinner Menus

Here are some of the celebratory menus I feature at Fireweed Dinner Service in Sitka, Alaska. These and many others are collected in an essay cookbook (TBA).

Maple Miso Coho with Cantaloupe Salsa

Locally caught coho broiled under a glaze of

salty yellow miso and sweet maple syrup, 
and garnished with ginger-lime fruit salsa

 

Coconut Basmati Rice

Fragrant basmati rice steamed with coconut milk

Coconut Winter Greens Stir Fry

Winter kale and rainbow chard flash sauteed with gingery
carrots and cabbage, coconut, and toasted spice seeds

Parmesan Panko Rockfish & Parsley-Walnut Pesto

Local rockfish baked in a zesty citrus-cheese crust with

emerald green drizzling sauce on the side

Slow-cooked with butter and aged Parmesan

Sweet carrot ribbons tossed with orange juice,
caramelized raisins, and caraway
