Shawarma Spice Mix

Toast and grind whole spices for this Middle Eastern Spice mix, which is excellent on grilled salmon, steak, or tofu. Marinate whatever you're grilling with your favorite blend of acid and salt, then massage in the spice mix. Brush with oil nd grill. The amount here is enough for about 3 1/2 pounds of meat, seafood, or tofu.


Shawarma Spice Mix

4 teaspoons whole cumin seeds

4 teaspoons whole coriander seeds

1 teaspoon red pepper flakes

1 teaspoon whole peppercorns

2 tablespoons onion powder

1 ½ teaspoons garlic powder

4 teaspoons paprika

2 teaspoons sumac


In a small skillet over medium heat, toast the cumin and coriander seeds until fragrant and starting to smoke. Cool slightly, then transfer to a spice grinder and process until finely ground. Transfer to a small bowl. Grind the red pepper flakes and peppercorns, then add to the bowl. Add the remaining spices and mix well.
